cherry vinaigrette

 
Ingredients -
1/2 cup Extra Virgin Olive Oil
2 Shallots, finely chopped
1/3 cup Sherry
1/4 cup unsweetened Dried Cherries, pitted
Salt and Fresh Ground Black Pepper, to taste
 
Preparation:

1. Heat olive oil in skillet over medium heat. Add shallots and sauté until softened.

2. Add sherry and boil for approximately 1 minute.

3. Add dried cherries, salt and pepper, heat through one minute longer.

4. Serve cherry vinaigrette immediately.
