lemon vinaigrette

 
Ingredients -
1/2 Cup Lemon Juice, freshly squeezed
1/2 Cup Olive Oil
1/2 Teaspoon Dijon Mustard
1 Tablespoon Shallots, finely minced
1 Tablespoon Fresh Parsley, minced
Salt and Fresh Ground Black Pepper, to taste
 
Preparation:

1. In a container with a tight fitting lid, mix all ingredients together and chill.

 



Vinaigrette Tip -
Radicchio

Developed from wild chicory, radicchio has striking red and white leaves.  It has a bitter flavor that contrasts well with other leafy greens.

Watercress
